Delicious Baked Apple Dumplings Recipe

I’ve always loved dumplings and this baked apple dumplings recipe is both tasty and simple to make which puts it right in my wheelhouse.

You might think the addition of the Mountain Dew is a bit strange but for some reason it works…just go with it.

 

Ingredients

  • 2 large Granny Smith apples (peeled & cored)
  • 2 x 10 oz cans refrigerated crescent roll dough
  • 1 cup butter
  • 1 tspn ground cinnamon
  • 1 1/2 cups white sugar
  • 12 fl. oz can Mountain Dew

 

Directions

  1. Pre heat the oven to 350°F/175°C and grease up and baking dish (roughly 10″ x 12″ is good).
  2. Cut the apples into 8 wedge segments.
  3. Divide the crescent dough into triangles and roll an apple wedge into each triangle of dough. Pinch together to seal the apple in.
  4. Melt the butter in a saucepan and stir through the cinnamon and sugar. Pour over the top of the apple dumplings and then pour the Mountain Dew over the top as well.
  5. Bake for about 40 minutes – the dumplings should be a nice golden brown color.

 

Sweet Honey & Garlic Glazed Meatballs

Even when it comes to my main meals, I love finding recipes with a bit of sweetness to them.

This is a fairly simple meatballs recipe that I cooked last weekend when my nephew was around because he loves his meatballs and being a kid will take his food as sweet as he can as often as he can.

I served this up with some curly fries – again, because I was cooking for my nephew…not because I love them too ;-)

Ingredients

2 lbs ground beef
2 eggs
1 cup dried bread crumbs
3/4 cup milk
1/2 cup finely chopped onion
4 cloves of garlic, minced
2 tspns salt
1 tblspn butter
1/2 cup honey
3/4 cup ketchup
3 tblspns soy sauce

Directions

  1. Pre heat oven to 400°F/205°C.
  2. Combine the milk and eggs in a large bowl then add in the onion, breadcrumbs and salt.
  3. Separate the beef and mix through the bread crumb mixture.
  4. Roll the ground beef mix into your meatballs, roughly 1″ in diameter and place them onto greased baking trays.
  5. Bake for around 15 minutes, looking for meat to be fully cooked.
  6. As the meatballs are cooking, add the butter and garlic to a saucepan over medium heat and cook for around 2-3 minutes.
  7. Add the honey, ketchup and soy sauce and bring to a boil. Reduce heat, place a lid on the saucepan and leave to simmer for about 5 minutes.
  8. Drain excess juices away from the meatballs and add them to the sauce, gently rolling them through to create an even coating. Cook for a further 5 – 10 minutes.

Easy Peach Pie Recipe

As the name suggest this is an easy peach pie recipe that pretty much anyone should have no trouble cooking.

Ingredients

  • 5 cups peeled & peaches
  • 15 oz packet pastry for a 9″ pie (2 sheets needed)
  • 1 egg, beaten
  • 2 tblspns lemon juice
  • 1 cup white sugar
  • 1/2 cup all purpose flour
  • 1/2 tspn ground cinnamon
  • 1/4 tspn salt
  • 1/4 tspn ground nutmeg
  • 2 tblspns butter

Directions

  1. Pre heat your oven to 450°F/220°C.
  2. Lay one of the pie crusts on the bottom and up the sides of a pie dish and brush with a beaten egg.
  3. Put sliced peaches in a bowl and drizzle with lemon juice. Mix together gently.
  4. In another bowl combine the sugar, flour, cinnamon, salt and nutmeg. Once mixed, pur over the top of the peaches and mix together.
  5. Add the peach flour mix to the pie crust and dot with the butter.
  6. Enclose the mix with the second pie crust and fold & seal the edges. Brush the top of the crust with the remaining egg. Add some slits to the lid to allow steam to escape.
  7. Bake for 10 minutes, then reduce heat to 350°F/175°C and cook for another 30 minutes, lookg for crudst to be golden color.

The Best Chocolate Chip Cookies Ever…No Kidding!

Obviously I’m going to be a bit biased when I call these the best chocolate chip cookies ever, but if you talk to any of my friends or family you’re definitely not going to find anyone who disagrees with that pretty massive claim.

For all it’s mouth watering deliciousness this is actually a pretty simple recipe to make…which means it’s the sort of recipe that you’ll comeback to time and time again.

 

Ingredients

  • 4 1/2 cups all purpose flour
  • 2 cups butter, softened
  • 2 tspns baking soda
  • 1 1/2 cups brown sugar
  • 7 oz’s instant vanilla pudding mix
  • 1/2 cup white sugar
  • 4 eggs
  • 4 cups semi-sweet chocolate chips
  • 2 tspns vanilla extract
  • 2 cups chopped walnuts

 

Directions

  1. Pre heat the oven to 350°F/175°C.
  2. Sift the baking soda and flour together.
  3. Combine the cream, brown sugar, butter and white sugar in a large mixing bowl. Beat in the pudding mix. Add the vanilla and eggs and mix together.
  4. Blend in the sifted flour mix. Stir through the walnuts and chocolate chips.
  5. Divide out your mix into cookie sized portions on cookie sheets.
  6. Cook for about 12 minutes looking for the the edges to be a delicious golden looking color.
